The likeable chef from the star village of Baiersbronn and former students of Eckart Witzigmann and Harald Wohlfahrt quickly led the parents' small and elegant family hotel to national fame through his cooking. His cooking is characterized by a creative approach to products and an inimitable perfection down to the last detail. Sackmann is a master of structures and aromas and loves finding new orders. Son Nico is now also on board and now two generations are leading the hotel and restaurant into the future.

The work paper documents Sackmann's distinctive sense of order and structure combined with his enthusiasm for the adaptability of food. The 45-part picture composition illustrates the metamorphoses of two products that could not be more contrasting: lobster and rice. Make eight out of two, make five, make four... The Black Forest masterfully combines the aggregate states and aromas of a delicacy and a staple food and has composed eight completely different dishes from them through its preference for structure and order.
