“Phil” grew up on a farm in Alford, Aberdeenshire and began his career as a chef at the age of 17 with an apprenticeship in a small pub called “Aberdeen's Shelly Leigh's Restaurant.” Inspired by his mother's cooking skills, he defied every challenge and thus ended up in several noteworthy kitchens such as “Waterwheel Inn”, “Lairhillock Inn” and, last but not least, in Germany's prestigious “Villa Hammerschmiede”. After three years with Johannes King on Sylt, he returned to his Scottish homeland, where he quickly cooked his way into the starry sky. He has been a chef at the venerable Inverlochy Castle for more than eight years and delights gourmets and critics alike.

In a monumental painting, the Scotsman presents the three phases of his craft development and his apprenticeship in Germany. He “serves” a total of eight different dishes to viewers — including fish & chips (pub), duck with red cabbage (Germany) and a fine dining menu (Scotland) — and invites visitors to enjoy themselves.
